PROFILE—IMMIGRANT, COMMUNITY COLLEGE STUDENT AND  GREENBURGH HUMAN RIGHTS COMMITTEE MEMBER OPENS UP NEW DELI IN ELMSORD –RINCON LA CHORRERA
HARD WORKING IMMIGRANT IS MAKING RESTAURANT FOOD GREAT AGAIN!  PRESIDENT TRUMP INVITED TO TASTE DELI’S DELICIOUS EMPANADAS
 
There is a lot of talk on the national level about immigrants. Our new President, Donald Trump, has made immigration a national discussion topic.  Some immigrants and their families are scared. This story is about a hard-working immigrant who was born in Ecuador and moved to Elmsford at the age of six. Her parents came to the United States legally and the immigrant I am featuring is a now a citizen of the United States.    Sindi Zhinin just opened a new deli in Elmsford –RINCON LA CHORRERA. The deli is located at 260 North Saw Mill River Road, Elmsford  (near Carvel). Sindi can be reached at 914-372-7855.   She also has a Face Book page RINCON LA CHORRERA. The name of the restaurant reminds Sindi of a beautiful waterfall in her native country that has been preserved and loved .
 
Sindi is trying to not only improve her life and the lives of her husband and three children who are all living with her legally in Elmsford. She is also trying to make a positive difference for others. Last year she was appointed to the Greenburgh Human Rights Advisory Committee by the Greenburgh Town Board.
 
Being an immigrant is not easy. She knows many immigrants who experience discrimination and disrespect because of the color of their skin or ethnicity or their presumed unlawful status – not because of their actions.  She feels that law-abiding immigrants should not be blamed for improper actions they have never engaged in.
 
In Ecuador Sindi’s family lived  on a farm.  It was difficult for her parents and family to make a living.  Some members of her family who are still in Ecuador make only $10 a day which doesn’t cover basic living expenses. In Elmsford, where she opened up her business – her small deli is starting to make a small profit.  Sindi is trying to save some of her profits so that she can help family members in Ecuador and in the United States who are less fortunate than she is.
 
The deli serves traditional Ecuadorian food – empanadas, humitas, tamles,  ceviche and encevollado and hornado and cuy.  These foods include bread, cheese, chicken, sweet corn, rice and other delicious ingredients. Two daily soups are offered each day. The deli also serves delicious sandwiches that Greenburgh residents are used to eating- sandwiches and hot foods. There are a limited number of tables and chairs.
 
Sindi gets up at 4:00 AM. The store opens at 4:45 AM when she starts preparing for the day. The first customers come at 5:30 AM.  Her staff includes  amazing cooks and hard workers. She closes the deli at 9:00 PM and goes to sleep around 10:00 PM.
 
Sindi worries about the controversies about immigrants.  She loves America and would like others to have the same opportunities as she has had.  She is currently a student at Westchester Community College, trying hard to gain the skills needed so she can give her children (ages 10, 6 and 3) a better life than she had. She is paying for her tuition. I teach one class at the Community College in local and state government. She was a student of mine last year. I learned a lot from her and from other immigrants who are studying hard trying to make a better life for themselves.  Her husband is in the construction industry and also works very hard.  Her children go to catholic school.
 
Sindi plans to invite President Donald Trump to visit her deli and to chat with her friends and customers who are immigrants so he will have a better understanding of how hard working our immigrant population is and how immigrants like her want to make America great again.  She asks –if any resident who reads this e mail has contacts with President Trump please encourage the President to stop by. She promises to make him a delicious Empanadas.
